- 1 cup fine zwieback crumbs
- 0.5 tbsp sugar
- 0.25 tsp nutmeg
- 1 tsp cinnamon
- 2 tbsp soft butter
- 5 pkg cream cheese
- 1.75 cup sugar
- 3 tbsp flour
- 1.5 tbsp grated lemon rind
- 1.5 tbsp grated orange rind
- 0.5 tsp vanilla
- 5 eggs
- 2 egg yolks
- 0.5 cup heavy cream

Prepare the pan
Butter a 9 or 10-inch springform pan.

Mix crust ingredients
Combine fine zwieback crumbs, sugar, nutmeg, and cinnamon. Mix with soft butter and save some for the top.

Mix filling ingredients
Beat cream cheese, sugar, flour, lemon rind, orange rind, and vanilla until smooth. Add eggs and yolks, mixing until creamy.

Combine and pour
Combine the filling mixture and pour into the prepared pan. Sprinkle with remaining crumbs.

Bake
Bake in a preheated 500°F oven for 10 minutes, then reduce heat to 250°F and bake for 1 hour.

Cool and serve
Cool the cheesecake, remove the sides of the pan, and serve. Chill in refrigerator if desired.
